Step 1: Sourcing from Jalgaon Farmers
We source directly from banana farmers in the Jalgaon district of Maharashtra. Our partnerships are with growers who have been cultivating the Grand Naine variety for decades. We buy green, raw bananas harvested at the optimal stage for chip-making - firm, starchy, and before any sugar conversion has begun.
Step 2: Same-Day Processing
Bananas are peeled and sliced on the same day they arrive at our facility. This matters because the starch in raw banana begins to change once the fruit is cut - freshness directly affects the crunch of the final chip.
Step 3: Frying in Fresh Oil
We fry in fresh oil every batch. We never reuse oil across batches because reused oil develops oxidised compounds that affect flavour and nutritional quality. This is a non-negotiable standard for us.
Step 4: Minimal Seasoning
After frying and draining, chips are seasoned with salt or masala - nothing else. No artificial flavours, no MSG, no preservatives of any kind.
Step 5: Airtight Packing and Dispatch
